Oreo Cupcakes



Ingredients

Cupcakes

125g dairy butter
125g self-raising flour 
4 T. Stevia sugar
 60g sugar 
2 T. milk 
 2 eggs
1 t. vanilla extract
1 to 2 t. baking powder
6 - 7 Oreo's

Buttercream

250g powdered sugar 
250g dairy butter
1 t. vanilla extract
12 Oreo's
coconut flakes 

Cupcakes
  1. Preheat the oven at 180 ° C.
  2. Separate the eggs and beat the egg yolks together with the sugar, then add the butter and vanilla extract.
  3. Mix the baking powder, flour and milk together and add it to the mixture.
  4. Crumble the oreo's and add it to the mixture.
  5. Beat the egg whites and mix it gently with the mixture. You can add some cinnamon.
  6. Divide this into 12 cupcake tins.
  7. Bake this at 180 ° C, for about 15 minutes.
Buttercream

  1. Crumble the 12 oreo's and mix it together with the icing sugar, vanilla extract and butter.
Finish
  1. Remove the cupcakes from the oven.
  2. Make a small cut in the middle and put some chocolate in it.
  3. Let the cupcakes cool.
  4. Finish it with the buttercream and sprinkle some coconut flakes on the cupcake.
  5. Decorate the cupcake as desired.
Tip: Buttercream with anglaise 
  • Anglaise: 
  1. Boil 100g milk + 150g vanilla sugar (75g + Vanilla sugar 5 tbsp Stevia)(keep stirring it) 
  2. Whisk 2 egg yolks with 15g sugar . 
  3. When the milk is boiling, add a third to the egg yolks. 
  4. Add this mixture back to the milk. 
  5. Put this back on a low heat, make sure you keep stirring it and do not let the anglaise boil. 
  6. Allow the anglaise to cool slightly. 
  • Buttercream with anglaise: 
  1. Crumble 14 oreo's 
  2. Beat 250g of dairy butter. 
  3. Gradually add the lukewarm anglaise (Note: the butter should not melt). (Keep beating it ) 
  4. Make sure you have a nice thick creamy mixture. Add the Oreo cookies.
